Ingredients
  

  • 1 tbsp. Olive Oil
  • 2 Bay Leaves
  • 2 Cups Vegan Sausage Sliced
  • 4 Cloves Garlic Diced
  • 1 tbsp. Ginger Minced
  • 1 Cup Red Onion Diced
  • 2 Green Chilies Deseeded, Diced
  • 1 Cup Natural Yogurt
  • 1/2 tsp Paprika
  • 1/8 tsp Ground Nutmeg
  • 1 tsp Cane Sugar
  • 1/2 tsp Grounded Black Pepper
  • 1 tsp Salt
  • 1 Cup Cherry Tomato Halved
  • 1/4 Cup Almond Crushed
  • 1 tbsp. Nutritional Yeast
  • 1 Carrot, Medium, Spiralized
  • 3 Zucchini Medium, Spiralized
  • 2 tbsp. Coriander Leaves Diced
  • 1 tbsp. Extra Virgin Olive Oil

Instructions
 

  • Let prepare the following ingredients: Olive oil, bay leaves, sliced vegan sausage, diced garlic, minced ginger, diced red onion, diced green chilies, natural yogurt, paprika, ground nutmeg, cane sugar, black pepper, salt, halved cherry tomato, crushed almond, nutritional yeast, spiralized carrot, spiralized zucchini, diced coriander leaves, extra virgin olive oil.
  • In a pot, combine the ingredients listed below.  with the olive oil, bay leaves, sliced vegan sausage, chopped garlic, minced ginger, and diced red onion, and sauté over medium heat for 2 minutes, or until the vegan sausage is cooked through.
  • In the same pot, add the following ingredients: Diced green chilies, natural yogurt, paprika, ground nutmeg, cane sugar, black pepper, salt, halved cherry tomato, crushed almond, nutritional yeast, spiralized carrot, Continue to sauté for another 2 minutes over medium high heat, until the vegetables are soft.
  • After that add the following ingredients spiralized zucchini, diced coriander leaves continue to sauté for another 1 minute over medium high heat
  • Finally, add the extra virgin olive oil and combine thoroughly.
  • Serve immediately on a plate with your choice of sausage and sauce.
